How the food is made

Every potato is cut by hand in our Allston kitchen each morning. The fries are double-fried the Dutch way. Once at low heat to cook the inside, once at high heat for the crust. Never frozen, never from a bag, never reheated.

Burger buns are baked in-house every morning, before we open. Come by at noon and they're still warm from the oven. The halal beef arrives from Hello Butcher in the morning and is ground that same day. We don't store ground meat overnight. Our patties are made fresh and cooked to order.

The kumpir is the slowest item on the menu and the one we're most proud of. Whole potatoes bake for 60 to 80 minutes in an oven we shipped from Turkey. Once a potato is ready, we split the skin, whip the inside with butter and cheese, and load it with the toppings you pick. Just like Ortaköy. Kumpir is available in-store only at our Allston shop, not for delivery. The Belgian waffle mix is also made in our kitchen, not from a box.

Why we are here

Allston is a student neighborhood. Boston University is a short bus ride or a walk down Cambridge Street. Boston College is a straight run out Comm Ave. Late at night most options are chains, late-night pizza, or driving across the river to find something different. We wanted to give the BU and BC crowd a real option for halal food made fresh.

We're open daily from 12 PM to 2 AM. The kitchen runs the same standard whether it's noon or closing time. The fries cut in the morning are the same fries we serve at 1:45 AM. The burgers in our lunch rush are the same as the ones at 1 AM. That part doesn't change.

The sauces

There are 9 sauces. The full list: FRIES B4 GUYS signature sauce, Amsterdam onion, garlic mayo, truffle mayo, Andalouse, bang bang, hot sauce, BBQ, and ranch. The signature sauce took 10 tries to get right before we put it on the menu. Every fry order comes with one sauce included. Pick whichever one looks good. If you can't decide, ask. We'll tell you what we think.
